A “forest-to-table” restaurant has opened in Columbia’s Vista district.
The Congaree Vista Guild held the official ribbon-cutting for The Hollow, a wild game restaurant and cocktail bar in the Vista on Wednesday, according to a news release.
The Hollow is a forest-to-table restaurant that specializes in rustic American cooking, the release stated. Its rotating seasonal menu includes bison, duck, boar and rabbit as well as a selection of fish, including pike, rainbow trout and walleye salmon.

There will also be vegetarian options and botanical cocktails, beer and wine.
“We’re delighted to have this new restaurant in the Vista. Chris Fitz, the owner and operator, has created a unique dining experience that people will really enjoy,” said Vista Guild Executive Director Abby Anderson in the release.
